Myth: Whelks have to be stored at an EC regulated temperature.

Response: This is untrue. Teh relevant Directive(91/492, 15.7.91) which fixes the hygiene rules governing the production and placing onto the market of living bivalve molluscs (oysters and mussels) simply indicates that the molluscs have to be conserved, stored and transported at a temperature which keeps them alive. There is no specific temperature mentioned. Equally these rules apply to sea urchins and sea snails.
